My family heirloom isn’t a priceless jewel or an antique (sadly), but my grandfather’s favourite recipe, prepared with my favourite vegetable, the very regal looking eggplant.
My grandfather was a lovely man who based his working and social life around food. I have the fondest memories of stories from around the time that he owned a Greek café that he managed with his wife and sons. I’m grateful that he was able bring the richness and flavours of his favourite family recipes and that they are such a big part of our family mealtimes.
My family heirloom recipe is one of my grandfather’s typical late night snacks from when he was working in the café. He would simply slow bake a whole eggplant – often left in the hot pizza oven for a delicious treat. Eggplant and lemon are still staples in my kitchen to this day – and this recipe always reminds me of my grandfather. Now you can make it too. Just follow the simple steps below.
INGREDIENTS
One eggplant
Lemon juice
Salt
HOW TO MAKE
Step 1: Pre-heat oven to 200°C and place eggplant on a tray in the oven
Step 2: Roast the eggplant for an hour until skin becomes wrinkly
Step 3: Remove from the oven and allow to cool. Then slice the eggplant in half, scoop out the delicious roasted flesh and season with a pinch of salt and a squeeze of lemon.
