Father’s Day all starts with breakfast. Bacon & Eggs is always a favourite – but why not surprise this year with something different.
This easy pancake batter can be scooped into a funnel (or a jug if you don’t have a funnel) to make pancake letters! You can spell out lots of words – but we expect “DAD” might be a favourite this weekend.
Try pairing with chopped up fruit and berries, honey and yoghurt.
INGREDIENTS
1 cup self raising flour
Pinch of bicarbonate of soda
¾ cup (190mL) milk
1 egg, lightly beaten
spray oil, for greasing pan
METHOD
- Sift flour and bicarbonate of soda into a medium bowl; stir in sugar. Make a well in the centre; whisk in combined milk and egg.
- Heat a medium non-stick frying pan over medium-low heat; lightly spray with oil. Pour around ¼ cup of pancake mixture into jug or funnel, move over frying pan in shape of letter. Cook pancakes until bubbles appear on surface, about 2-3 minutes; turn and cook for a further 1-2 minutes or until cooked through. Transfer to a plate. Cover loosely with foil to keep warm. Repeat with remaining mixture, spraying with oil between batches.
- Serve with fruit, honey and yoghurt.
