Preparation
PREP: 15 minutes | COOK: 20 minutes | SERVES: 4
SIMPLY ADD:
- 2 eggs, beaten
- 500g chicken thigh fillets fat trimmed, cubed
- 1 medium onion (150g), chopped finely
- 1 medium red capsicum (200g), chopped finely
- 3 cups cooked rice (450g) (Note: 1 cup (210g) uncooked rice makes 3 cups cooked rice)
- 1 ½ cups of mixed frozen vegetables (180g)
Tip: Garnish with spring onion.
Prep: 15 mins | Cook: 20 mins
- Cook rice as per pack instructions; set aside to cool.
- Heat 1 tsp oil over medium heat in a frypan or wok; pour in egg. Swirl pan to coat base with egg; cook for 1- 2 minutes or until set. Remove from pan; roll, slice thinly, reserve.
- In same pan, heat 1 tsp oil on high heat; brown chicken until cooked through. Add onion and capsicum, cook for 2-3 minutes. Add rice and frozen vegetables.
- Add combined 1/3 cup (80mL) water and MAGGI Recipe Base. Mix well, cook for 5 mins or until heated through, stirring occasionally.
- Add reserved egg, garnish with spring onions (optional); toss through. Enjoy!
- No need to add extra salt.
